I love chocolate! And I've loved it ever since I was a kid.
Now, as a woman, I especially notice my craving for chocolate increases right before my period (I think it's because of the iron content).
So, why not make some delicious, vegan, and healthy brownies?
I’ll be honest, when I first heard you could make brownies with zucchini, I was pretty skeptical!
But trust me, you, your husband/wife, or your kids won’t even taste it.
What you will taste are super moist, vegan, soy-free, oil-free, and super chocolatey brownies.
And since it's all about the recipe here, let’s dive right in.
Ingredients:
300g zucchini, grated
1 banana, mashed
180g all-purpose or spelt flour
100g soaked dates
100g soaked cashews
80ml dairy-free milk
60g unsweetened cocoa powder
60g chopped vegan chocolate (I use 70%)
50g sugar of your choice
1½ tsp baking powder or 1 tsp baking soda
½ tsp salt
1 tsp vanilla extract (optional)
Recipe:
As always, I just throw all the ingredients together and mix them.
The only thing I add last is the chopped chocolate.
Also, make sure to only mix the ingredients until everything is combined. If you stir too long, the brownies can get a bit chewy.
Then, pour the mixture into a baking pan of your choice and bake it at 180°C (350°F) for about 30-40 minutes (depending on your oven).
